Banana Bread
Serves 8-10
4. C flour
2 tsp. baking powder
1 3/4 C sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
Mix then add:
2 eggs
2 C. mashed bananas (or 4-5 bananas)
1 C of oil or butter
6 TB. milk or water
Bake for 30-45 min. (or until golden.) Sprinkle powdered sugar on top or honey.
Indonesian Vegetable Rice
(in order of layering) Serves 7-9
3-4 C. dry millet
1-2 C. Couscous
1 1/2 C. water (pour in dish)
2-3 small banana peppers (chopped)
2 smaller onions (chopped)
1/2 packet of liq. taco sauce
1/2 packet of taco seasoning
1/4 tsp. salt
1/2 tsp. cumin
1 tsp. hot sauce
1/2 sweet potato (sliced and lay across the top)
1/4 zucchini (sliced and lay around the edges)
1/4-1/2 C. corn (sprinkle on top)
Put in a casserole dish. Bake for 23-30 minutes (or until the millet is soft)
Fajita Sauce Broccoli
(in order) Serves 5-6
1 bag of frozen broccoli (put in a glass pan)
1& 1/2 pieces of bread, crumbled on top
pour fajita sauce on top
stick in oven to heat
add chopped onions and celery
Once hot, take out and add Parmesan and olive oil.
